2013 Merlot

A beautiful deep brick color combines with an assertive Bing cherry and spice-driven nose. The aromas include lavender and jasmine, anise and malted cocoa, peppercorns, light straw tarragon with hints of warm bread along with the classic expression of Merlot red fruits. Driven by cherry and raspberry fruits along with spice rack characters repeated on the nose, there’s an outstanding savory mouthfeel. The tannins are in check contributing to the mouthwatering profile and its warm lengthy finish. Consider this wine one for the ages.

Butternut Squash Risotto with Black Truffles

This is a very cool dish because it is vegetarian, yet the cheese and truffles bump it up to a red wine pairing. It is perfect with Merlot. For the carnivorous, add a short rib on top. Vegetarian or not, everyone is happy. Do not fear the truffle. As with many things, they are available on the internet for most of year.

Cold soaked 24-36 hours, fermented for 12-14 days on skin. Individual lots aged separately for 12 months before barrel selected for the blend, followed by 6 months additional aging prior to bottling. 60% new French oak.
