Exhibiting an extraordinary dark color for 100% Merlot, the 2015 vintage opens up with breathing, showing aromas of cranberry, cherry and dark cocoa. There are also subtle oak nuances lifting to a floral bouquet of rose petals. Powerful and expanding, this wine offers plenty of savory flavors to balance pleasant fruit, with thyme and oil-cured black olive dancing with red currant and cassis.

“A beautiful Merlot, the 2015 Merlot offers classic notes of black cherries, dark chocolate and roasted herbs in a supple, full-bodied, sexy, rounded style. It picks up some graphite and licorice with time in the glass, has present tannin and a great mid-palate”

This is a very cool dish because it is vegetarian, yet the cheese and truffles bump it up to a red wine pairing. It is perfect with Merlot. For the carnivorous, add a short rib on top. Vegetarian or not, everyone is happy. Do not fear the truffle. As with many things, they are available on the internet for most of year.

Cold soaked 24-36 hours, fermented for 12-14 days on skin. Individual lots aged separately for 12 months before barrel selected for the blend, followed by 6 months additional aging prior to bottling. 60% new French oak.
